Vegan Mofo 2013 - Solo Eating.


This is what I eat when the little ones are out. I used to be a meat-eater before finding the world of veganism. Though I was never a fan of most meats, I wasn't completely innocent. So when the kids aren't home, I do tend to eat some vegan junk foods, like these "nuggets" pictured below. One of the major reasons I eat these without my littles is because they are wheat-heavy, and therefore not son-friendly. Here I roasted some vegetables with them.



The vegetables pictured are broccoli, fennel/anise, red pepper, onion and celery. I had two huge plates of the roasted vegetables, they turned out to be my favorite part. I didn't use any oil to roast them, but I did need to add a bit of water to the pan about halfway through cooking.

  1. Mmm are those the gardein strips? I love those but I'm gluten intolerant so usually the kiddo gets them without me. I always forget that plain roasted veggies are so yummy.

  2. Yes they are, and it's a backwards situation to yours. :) My son becomes highly reactive to gluten so I eat them when my three are not home. Sometimes it is easier to have everybody do gluten free.
